"Meal 1" as this has been affectionately deemed is a family favorite. Apricot Ginger Chicken is its more formal name and is ridiculously easy, with only four ingredients, chicken thighs, apricot preserves, Dijon mustard, and ground ginger. I can't exactly remember when I started making this, but it has been a long time. It's the meal I cook when I'm in a pinch for unexpected guests or when I'm in a creative funk. It was also the one thing my son asked me to teach him to make when he went off to live on his own. Meal 1 has a bit of a following and has in its own right become somewhat famous. I would venture to say that if Meal 1 started an Instagram account it would be a hot little item, with other chicken dishes wanting to become just like it.
In a rather surprising way Meal 1 became the hook for my son "catching" a girl. When he invited this sweet unsuspecting girl over on a first date he offered to cook for her. He made Meal 1 and she was quite impressed thinking he was a wonderful cook. Of course she later found out that was all he could make, but nevertheless Meal 1 did its job and now I have a lovely daughter-in-law!
Yes, so there you have it, the power of a chicken thigh. Who knows what else this meal could do...-s
Meal 1: Apricot-Ginger Chicken
· 6-8 boneless, skinless chicken thighs
· 1 cup apricot preserves
· 1 tsp. ground ginger
· 3 Tbsp. Dijon mustard
· Salt & Pepper
Preheat oven to 425 degrees F. Salt and pepper chicken thighs on both sides. Place thighs to down on a baking sheet lined with foil to make for easy clean up. Mix together apricot preserves, ginger and mustard. Brush thighs with 1/2 of the mixture over the chicken. Cook for approximately 12-15 minutes. Turn over and brush the rest of the apricot mixture over the top and finish cooking, about another 10-12 minutes.
